Warm mackerel and potato salad

600g new potatoes

200g chorizo

40g plain flour

1 bunch spring onions, finely sliced

Small bunch of flat-leaf parsley, leaves picked and finely chopped

1 lemon

Extra virgin olive oil

8 mackerel fillets

 
 

Method


  • Bring a large saucepan of salted water to the boil, add the potatoes, bring back to the boil and cook for 12-15 mins.

  • Chop the chorizo into small chunks and heat in pan on a medium heat until crispy

  • Spoon into a large bowl and add the spring onions alongside the cooked potatoes. Add the juice of the lemon and a glug of olive oil. Season with salt and pepper and toss to combine

  • Give the chorizo pan a wipe and place back onto a med-high heat.

  • Season the mackerel fillets, then place skin side down in a hot pan for 8 mins, flip and cook for a further 2 mins

  • Serve with the potato salad and lemon wedges on the side
